Cornish Fairings

Cornish Fairings are a traditional type of ginger biscuit originally sold at Cornish fairs and
were often bought by young men for their sweethearts!
Ingredients:
125g butter
I x tablespoon golden syrup
188g self-raising flour
Pinch bicarbonate of soda
1 x level teaspoon ground ginger
94 g castor sugar
Method:
Heat oven to 150C.
Lay a sheet of baking paper on a baking tray or grease a baking tray.
Melt butter & golden syrup in a pan over a low heat. Stir in sieved flour, bicarbonate of
soda, ground ginger & sugar. Mix well. Form into small balls (approximately ¾ of a dessert
spoon) Flatten slightly. Allow room for spreading.
Cook on middle shelf for 12-15 minutes till a golden brown. Leave for 8 minutes to cool on
the tray. Finish by putting on a wire tray to cool completely. This recipe makes about 15.
