Trail snacks

DATE BOATS

3 dates, pitted

3 almonds per date

If dates have pits, remove. Stuff each date with 3 almonds or nut of choice. Throw in a plastic baggie and you’re ready to roll!

Per 3 date boats: 300 cal, 6g fat, 54g carb, 9.5g fiber, 4g protein

BANANA OAT MUFFINS

2 (180g) cups oat flour (blend quick oats)

1 cup (227g) non-fat plain Greek yogurt

2 large eggs

2 ripe bananas (200g), mashed

1/4 cup brown sugar

1/4 cup mini semi-sweet or dark chocolate chips

1.5 tsp baking powder

1/2 tsp baking soda

Grease muffin pan (12 or 24). Blend all ingredients on low speed until well combined or with a mixing spoon. Do not over mix! (Note: I blend eggs, banana and yogurt then fold in dry ingredients). Bake at 400F for 15-20 minutes.

Per 1 muffin: 126cal, 3g fat, 20g carb, 5g protein

Per 1 mini muffin: 63cal, 1.5g fat, 10g carb, 1g Fibre, 2.5g protein
