by Del Jenkins, will demonstrate how to prepare and cook authentic
Filipino foods including Pansit (stir -fried noodles) and Lumpia (Filipino fried spring rolls).
12:15-1:15 Cuban Ropa Vieja:
Having learned to cook from her Cuban
grandmother, Melanie Jimenez Jones
prepares Ropa Vieja - a Cuban national
dish named “old clothes” from the look
of its main ingredient, shredded beef.
The origins date back over 500 years
from the Sephardic Jews of the Iberian
Peninsula in Spain. When the Spanish
travelled to the Americas and the
Caribbean it became a staple in many
countries. Different versions were
then created with their own regional
and cultural twists.

Kimchi Pancake: Korean
born Clara Meyer and members
of the Korean Inter-Married
Women’s Association (KIMIWA)
will show guests how to make
a simple but very interesting
dish made of kimchi, flour and
eggs. How spicy? Come taste

2:45-3:30 Nigerian Chickendodo: Elkanah Jumoke shares
her recipe for chickendodo, also known as the Nigerian stir fry. Ingredients are seasoned chicken, fried ripe plantain, seasonal vegetables,
regular African spices and Suya spice.
3:45-4:45 Iraqi Ma Klamh: Born
and raised in Baghdad, Chef Ali Kazem
migrated to the United States in
2012. He will prepare Ma Klamah,
a popular breakfast dish made of
beef, eggs, parsley, onion and
spices.

5:30-6:30 Fahari Classix: Fahari Amiyah is a singer and
songwriter originally from Winston-Salem North Carolina, presently
residing in Salem, Oregon. For
her, music comes as naturally
as breathing, performing in
multiple genres including;
Blues, Bluegrass, R&B, and
Folk. With smoky vocals,
an impressive range, and
creative lyricism, Fahari aims
to leave even the biggest
skeptic a believer.
