1. Cover the gammon joint with water in a large saucepan. Add the onion, bay leaves and peppercorns. Bring to the boil on a low heat and simmer for about an hour and a half.
2. Remove from the pan and allow to cool down.
3. Preheat your BBQ/Smoker/Oven to 200C. Remove the skin from the ham with a sharp knife and throw away.
4. Criss cross the fat layer with a sharp knife.
5. Slightly melt the honey in a microwave for a few seconds, or mix with a little hot water and brush it all over the ham.
6. Roast for 20-25 mins until golden and crispy. Baste with Gran Luchito Smoked Chilli Honey every once in a while.
7. Leave to rest before carving.
