with ONION PONZU AND GARLIC CRISPS
INGREDIENTS
100g Beef fillet
Onion ponzu
Ponzu
3 Spring onions, sliced finely,
washed and dried
Garlic crisps
PREPARATION
Ponzu
Rice vinegar, 10parts
Dark soy, 5 parts
Lemon juice, 1.5 parts
Onion ponzu
White onion, 1 finely diced
Grapeseed oil, 30g
Ponzu, 25g
Garlic puree, 1 tsp
Garlic crisps
Blanch the sliced garlic in milk, rinse in cold water, dry off
well and deep fry at 140°C. Store in a warm dry place
