RECIPES Fancy a sweet treat? These lemon and poppy seed muffins are just the ticket Lemon poppy seed muffins Prep time 10mins These gorgeous lemon poppy seed muffins are so quick and easy to make. They make a brilliant picnic treat or simple sweet snack for your lunch box. Makes 8 • • • • • • • 150g ground almonds 30g rice flour 3 eggs Juice and rind of 1 lemon 50ml manuka honey generous sprinkling poppy seeds 1 tsp of baking powder 1  2  Preheat oven to 160°c. Stir in the poppy seeds. Pour into a silicone muffin tray. 3  4  5  6  Bake for 30 mins at 160°c. Use a skewer to check your cakes are baked through.
