Chocolate, Orange and
Cranberry Tart
For the Pastry
• 150g plain flour
• 4 tbsp icing sugar
• Grated zest of one orange
• 1 tsp orange essence
• 1 medium egg yolk
• 100g of unsalted butter, softened
• Pinch of salt
For the filling
Chocolate tart has to be one of my all-time favourite desserts.
There is something deliciously decadent about the crunch of
the pastry case against the cool softness of the chocolate filling.
It is the perfect dessert for Christmas time and a great modern
alternative to traditional Christmas pudding and cake.
This version contains plenty of orange for a lovely citrusy kick. It is also full of
cranberries, a dried berry synonymous with the festive season. When you take a bite of
this you get the extravagance of the chocolate filling, balanced with the striking taste of
orange and the texture of the cranberries. What’s not to like?!

• 200g dark chocolate (70% cocoa)
either chocolate drops or a bar cut
into small pieces
• 50 unsalted butter
• 300ml of whipping cream
• 2 tbsp liquid glucose
• 2 tsp orange essence
• 100g dried cranberries
• Candied orange peel, chocolate curls
or edible glitter to decorate and serve
