Mascarpone and Lime
Cheesecake
Ingredients
• 2 x 250g tubs of mascarpone
• 2 limes
• 100g icing sugar, sifted
• 1 packet of ginger nut biscuits
• 50-100g unsalted butter, melted
• 1 small dark chocolate bar

• Round 8” pie dish
• Rolling pin
• Large plastic sandwich bags
Dessert for a dinner party or barbecue is one of those things
that is sometimes a bit of an afterthought.
You’re so busy preparing the main meal, you often forget about pudding, panic and buy
a mundane pie from the local supermarket. But this mascarpone and lime cheesecake
is quick and easy to make, requires no baking and tastes delicious. You can even
tell your guests you spent ages perfecting it whilst in reality it probably only took you
20 minutes! The ginger nut biscuit base gives it a great contrasting crunch and the
sharpness of the limes offsets the richness of the mascarpone perfectly.
