Vanilla Cookies
Makes approximately 20-25 medium cookies
I have been decorating cakes ever since I can remember and
since starting my business, Brighton Cakes, they have become
ever more elaborate and complicated. But some of my favourite
recipes are often the most simple to follow. Cookies are a great
way to dip a toe into the world of cake decorating without
h aving to buy lots of specialist equipment. They are perfect to
nibble on with a cup of tea, brilliant for children to have a go at
and can make lovely presents at any time of the year.
This recipe is a fabulous one to make, producing some easy but impressive decorated
cookies using ingredients you can buy in your local supermarket. There are more
cookie cutters available now than ever before so you can either stick with simple round
cutters or you can go wild and buy everything from flowers and hearts to pirates, trains
and birds.
So pick out your cookie cutters, choose your favourite sprinkles and get dunking and
sticking.

For the cookies
• 200g Unsalted Butter
• 200g Caster Sugar
• 1tsp vanilla essence
• 1 medium egg
• 400g plain flour (substitute 100g of
flour for 100g of cocoa powder if you
wish to make chocolate cookies
For the decoration
• 1 medium egg white
• Approx 200-250g icing sugar
• Supermarket edible sprinkles or 100s
and 1000s of your choice
• Piping bag
