CUCUMBER AND FETA TOAST
1 baguette
6 ounces feta cheese
4 teaspoons olive oil
2 teaspoons lemon juice
1 English cucumber, thinly sliced
(peeling is optional)
salt and pepper to taste
Slice baguette lengthwise and brush
both sides with olive oil. Bake at 400
degrees until crispy around edges.
Mash feta, olive oil and lemon juice
together with a fork. Spread mixture
over the toasted baguette. Top with
thinly sliced cucumbers. Season with
salt and pepper, drizzle with olive oil
and garnish with mint. n
