HEALTH Regular glucose is for sure glycating, as is especially fructose found in fruit sugar, juices, and things like high fructose corn syrup and, heaven forbid agave syrup (the supposed darling of the health food industry), which nobody should consume; it’s not remotely a healthy sweetener, I’ll tell you right now. Fructose is anywhere from 10 to 30 times more glycating than glucose. In fact, not only will it destroy your heart faster than anything else can, but also will have the effect of triggering fat storage at a very accelerated rate. There’s an enzyme called fructokinase that gets activated in the presence of fructose, and it basically hearkens back to the days where we were eating ripened fruits and berries at the end of the summer in order to fatten up for the winter. Nowadays I don’t care if you’re living in Minnesota in February when it’s 40 below outside, winter “ain’t coming” for us anymore. We’re all living in climate controlled environments where it’s roughly 72o Fahrenheit and comfortable almost all of the time. What happens is that we get this fat switch flipped on and your body thinks that it’s time to store fat for the winter, which we would at least be burning off if we were having to live through a cold winter.
