Pickled Butternut Squash Salad from Coltivare Of all the things we love at Coltivare ( and there are many ), we are especially happy when this seasonal salad returns to the menu . Featuring lacinato kale , pickled butternut squash , smoked gouda , pecans and local pears , Chef Ryan Pera says , “ We wanted a late summer / early autumn salad that was refreshing , utilized our local produce and that was unique .”

Cucumber Gazpacho from Bernadine ’ s Chef Graham Laborde puts out some killer cuisine , including this incredible chilled summer soup that we could easily eat every day and never tire of . Cucumber puree is combined with tangy buttermilk , fresh dill , parsley and other spices , along with the kicker : little bits of pureed , pickled jalapeno along with tender pieces of crab and housemade queso fresco . Honestly , it ’ s heaven in a bowl .
Habanero Eggplant from Borgo Food Station We are crazy about this cute , new take-out spot on W . Alabama , offering so many fresh , beautifully prepared items . Erin doesn ’ t even like eggplant , but she instantly fell head over heels for talented Chef Monica Fallone ’ s version of sliced and grilled fresh eggplant , marinated with garlic olive oil , Sicilian oregano and just a hint of habanero pepper ( you wouldn ’ t call it spicy , though ).

The “ Secret Burger ” from Pax Americana We are definitely known as girls who love a great burger . When Chef Adam Dorris began offering this version ( at the bar only or at Zimm ’ s Bar next door ), we knew it would be something special . Two 4.5-oz ., grass-fed beef patties from 44 Farms , fermented cucumber with dill , Cabot white cheddar and red onion on a housemade potato and “ Ramp Longos ” bun make for one badass burger .
