A few highlights included a Chicken Liver Pâté paired with
Moët Imperial Champagne, a sweet-savory tag team on the
tongue that made me know I was in for a fun ride.

A couple of courses later, the Gulf Prawn Risotto may have
been my favorite. Saffron risotto with blistered rainbow chard
and some Parmesan hosted a beautiful fresh prawn. The La
Cana Albariño from Spain, with its mineral notes and spices,
was the perfect light, crisp complement.
Next, Chef Stefon delivered what he calls a Street Taco that
Consisted of prime ribeye, avocado-Serrano crema, masa
and pickled red onions, which was delicious enough, but it
was creatively deconstructed. The masa was crumbled, the
crema sprinkled on the plate and the onions and ribeye served
separately.
The feast continued with little Dorper Lamb T-bones, followed by
pan-seared duck breast and Texas peaches. Dessert was seasonal berries and a blueberry scone with raspberry sorbet.
There is a traditional menu, and the items will change seasonally, but if my experience is any indication, wherever Chef
Stefon takes the cuisine will be a place worth exploring.
