Gluten-Free FRIED CHICKEN

Ingredients
• 1 / 4 cup coconut flour
• 1 tablespoon coconut oil
• 2 large chicken breasts
• 1 teaspoon paprika
• 1 teaspoon cayenne pepper
• 1 teaspoon garlic salt
• 1 teaspoon onion powder
• 2 eggs
Notes
If you prefer not to egg wash your chicken , you can use a light spread of plain Greek yogurt to help bind the seasoned flour mix to the chicken .
Instructions
1 . Preheat oven to 350 degrees . 2 . Crack eggs into a bowl and whisk until smooth . 3 . Mix seasonings on a plate with the coconut flour . 4 . Dip chicken into egg wash so it ’ s fully covered . 5 . Place the chicken into seasoning and flour mix . Coat well . 6 . Heat a large frying pan to medium heat . 7 . Add coconut oil and let it heat for a few minutes .
8 . Place chicken in the pan and fry on one side until coating is golden brown . Flip over and repeat .
9 . Pull the chicken from the pan and add to a cooking sheet . 10 . Bake at 350 degrees for 10 minutes . 11 . Garnish with a sprig of freshly chopped parsley or cilantro .
