This kid-friendly recipe features coconut flour and time in the oven , not the fryer .

Homemade FISH STICKS

Serving Size : 4 | Prep Time : 10 minutes | Cook Time : 15 minutes
Ingredients
• 1 pound cod filets , cut in to small pieces
• 1 cup coconut flour
• 3 eggs , beaten
• 1 teaspoon salt
• 1 cup panko bread crumbs
Notes
Serve with tartar sauce , ketchup or your favorite dipping sauce . To make this recipe gluten-free , replace the panko bread crumbs with glutenfree panko bread crumbs , found at most food markets .
Instructions
1 . Preheat oven to 400 degrees .
2 . Line up three small bowls . Add flour to the first , eggs to the the second and bread crumbs to the third .
3 . Dredge the cod pieces beginning with the flour , then the eggs and panko bread crumbs ( using one hand for the dry-ingredient bowls , and a different hand for the egg bath ).
4 . Sprinkle with salt . 5 . Add the cod to a wire rack sprayed with oil and place in a roasting pan . 6 . Bake for 8 minutes . 7 . Turn the fish over and bake another 6 minutes .
