This one is a very yummy berry flavored
?cheesecake? (that actually has no cheese because
it? raw!) made with dates and walnuts (for the crust)

and packed full of healthy fats, berries, apples and
strawberries. This incredibly easy to make crust and
filling won? take you long at all to put together, but
t
is sure to impress pretty much anyone, especially
kids!

One of the 4 ingredients is Medjool dates. Dates have
some amazing health benefits including relief from
constipation, intestinal disorders, and diarrhea. They
also help prevent anemia, heart problems, stomach
cancer, and more. Theyare an excellent source of
manganese, phosphorous, potassium magnesium,
sulfur, and iron, and many health experts agree that
eating just one date a day is a way to stay in optimal
health and also protect against night blindness!
Dates are delicious on their own, but some people
don? really like them in their natural state.

Fortunately, most people should love this recipe
because the end result tastes like peanut butter
cookies!
Crust: Process 250g medjool da tes and 150g walnuts.
Press mixture into tin or silicone mould and press
down firmly.
Cheesecake: Juice 250 strawberries and 2 medium
sized apples, them blend them with:
1 large avocado

8 tbsp coconut oil
Yield: 12 Cookies
3 tbsp lecithin
Time: 5 Minutes
4tbsp beetroot/ berry powder
Ingredients:
5tbsp coconut nectar
1 Cup Medjool Dates, pitted
3tbsp Lemon Juice
1 Cup Almonds, ground
Blend filling ingredients until you achieve a smooth
cream. Pour over the crust and set overnight in
fridge. Add a selection of berries and wild alpine
flowers to decorate.
½ Cup Natural Peanut Butter
1 tsp. Pure Vanilla Extract
Method:
Combine all ingredients in a high-powered blender or
food processor and blend on high speed until all
ingredients are combined. Scoop out by the spoonful,
(about 1-2 tablespoons) roll into a ball in your hands,
place on parchment paper and then squish down with
a fork.
Excellent nutrition and the best fats that not only
make this delicious, but one your family will so enjoy
during the summer months!
