Italian mini loaves (8)
The ideal gluten-free option for topping with all sorts of delicious ingredients,
smothering in cheese and eating on their own, or for dunking into steaming
bowls of chilli or soup around the bonfire.
For the loaves:

• 1tsp garlic powder
• 1tsp oregano
• 65ml olive oil or melted butter
• 2 free-range eggs
• 65ml milk
Toppings:
Whatever you like! From olives and onions, to
peppers, tomatoes, chorizo and cheese, make
the loaves your own and sprinkle all ingredients
on generously before baking.
Method:
1. Pre-heat the oven to 170°C and grease an
8-hole mini loaf tin.
2. Measure the batter mix flour, garlic powder
and oregano into a large bowl and mix well.
3. Make a well in the middle and add the eggs,
olive oil/melted butter and milk. Whisk all the
ingredients together well until you have a
smooth, lump-free batter.
4. Pour the batter into each loaf tin case. Top
with ingredients of your choice.
5. Bake in the oven for about 20-25 minutes,
or until top is golden and a skewer can be
inserted into the middle and is clean when
removed. Remove from oven and eat!
