Leavened bread has been around
since around 3000BC, which was
considered much more pleasant than
traditional flatbreads, but there was
one problem: it would go hard in the
desert sun. The solution? Toast.
Toast has come a long way since,
with the electric toaster being invented
in 1893, helping make toast a
worldwide breakfast staple.

Ingredients:
• 3 spring onions
• 4 cherry tomatoes
• 6 eggs
• Herbs of your choice (basil, oregano, etc)
• 2 slices cheese (cut into 6 pieces each)
Method:
1. Preheat your oven to 200ºC.
2. Place the eggs, spring onions and tomatoes
in a bowl and mix. Add a pinch of salt if you
prefer.
3. Fill a muffin tray with the mixture and place a
square of cheese on each muffin.
4. Bake for 15-18 minutes. The tops should be
firm to the touch.
