nutritionist, Daphne
Lambert, for a full
weekend exploring
the relationship between the land and the food it produces. Whatever is in
season when the course runs is what is used to show you how to find and
prepare fresh food for the whole family. Recipes include soup, bread, salads,
and desserts, as well as some delicious main courses. Special rates are
available for booking all four courses in advance. Accommodation is in the
farm’s stunning stableblock, and meals are provided (when you haven’t
cooked them yourself!). In addition to these courses, Trill Farm also runs
day course s on such varied topics as Towards A Zero Carbon Britain, Peg
Loom Weaving, and An Introduction to Bee Keeping.
At Taste the Wild, there are a number of fun and varied courses to try, each
with a different theme, but each one dedicated to the idea of foraging and
cooking wild food. Hedgerows and woodlands are full of edible treats, and
at Taste The Wild it is your chance to discover just how good this all-natural
and absolutely free food can be! Learn what to eat and how to prepare it,
either in the woods or on the coast. If you opt for the artisan food course,
you will even learn how to butcher a deer, make sausages, how to milk
goats, and make cheese.

If you have ever wanted to bake bread, but want to do it properly and
weren’t sure how, this five-day residential course in gorgeous Wales will
teach you everything you need to know. Run by Magdalena and Nick of
Bexleyheath-based Cocoa and Heart, the course will guide you through the
bread baking process from beginning to end, including finding the perfect
recipe, the different types of bread, and how to get that crunchy crust we
all love. The course takes place in a huge Victorian mansion that has six
ovens in its large, spacious kitchen, and all food is included in the price.
These food-smoking courses in Cumbria are practical and hands on, and
can be carried out on either a one-day or a two-day trip. Here you will get
to taste perfectly smoked food as well as learn how to prepare it, and as
an extra, you will learn about the history of smoking food, and some useful
hints and tips on how to do it in your own home. The one-day courses
include smoking around 14 different types of food using seven different
smokers (both hot and cold), and you’ll get to prepare your own lunch,
which can be enjoyed with a glass of fizz! The two-day course also includes
teaching you how to prepare a whole salmon, how to make sausages, and
a fishing trip so you can catch your own trout to smoke the next day. Ask

Covent Garden’s School of Wok specialises in teaching the art – and it really
is an art – of cooking mouth-watering oriental and Asian cuisine. Courses
range from three hours to full weekend, and include food from Korea,
Vietnam, Thailand, China, and South East Asia. Try a sushi-making course,
or turn your hand to creating dim sum, as well as a whole range of exciting
and different foods and techniques.
