STUFFED TWICEBAKED SWEET POTATOES Tip: If you want to add more vegetables to the recipe, that’s fine – just make sure it all blends together in the final mix. Ingredients • 4 sweet potatoes • 4 strips bacon • 170ml sour cream • 50g sun dried tomatoes in oil (drained, dried, and finely chopped) • 2 spring onions (chopped) • 1/2 tsp salt • 170g grated Cheddar Method 1. Use a fork to stab the sweet potatoes all over, and then place in a shallow microwave-proof dish. Microwave on high, turning every 2 minutes until tender (about 10 minutes). Set the sweet potatoes to one side to cool. 2. In a frying pan, cook the bacon until it is crisp (approx 8 minutes). Once cooked, transfer to a sheet of kitchen towel, and once cooled, crumble the bacon. 3. Preheat the oven to 200°C (180°C fan, 400°F). 4. Halve the sweet potatoes lengthwise and scoop out the flesh, leaving about 1/2 inch behind. Keep this safe for later. Place the ‘shells’ of potato skins (cut side up) onto a baking tray and bake for 5 minutes. 5. Now add the bacon, sour cream, tomatoes, spring onions, salt, and half the cheese to the sweet potato flesh. Once mixed, spoon the filling into the skins and sprinkle with the rest of the cheese. Return to the oven and bake for a final 10 minutes. STUFFED BAGEL PIZZAS Tip: Add your favourite pizza toppings to the mixture to change the flavour; ham, pepperoni, and peppers all work well. Ingredients • 200g grated mozzarella • 250g ricotta • 140g spinach (chopped) • 1/2 tsp salt • 4 bagels • 175g tomato pasta sauce Method 1. Preheat oven to 200°C (180°C fan, 400°F). Line a baking sheet with foil and place it in the oven to heat. 2. Mix the mozzarella, ricotta, spinach, and salt together. 3. Carefully slice the top of each bagel and discard. Then scoop out the middle of the bagel and discard that as well. Make sure the crust stays intact. 4. Spread 2 tbsp of tomato sauce inside each hollowed out bagel. Divide the cheese mixture between the bagels and spread that on top of the sauce. 5. Place the bagels on the preheated baking tray and bake for around 15 minutes (until the cheese is bubbling and the bagels are crisp). 43
