The story of Burgh Bites is the story of the American Dream realized by owner Ricci Minella , a Char Valley and Duquesne University graduate who ’ s been working his way up ever since his diploma was handed to him .

“ I was going to culinary school and working for a restaurant in Scott Towne Center ,” Minella said . “ I saved up and bought a food cart that I worked in Shadyside for about three and a half years . At that point , I had saved up enough to buy the Burgh Bites food truck . Two and a half years later , we opened this shop in Heidelberg .”
Throughout his journey , Minella said that the lynchpin has always been the food . Created fresh every day from scratch , everything from the pastas to the tortilla chips is made in house by Executive Chef Jon Tryc . From the Chicken Griglia Wrap - lemon-pepper , grilled chicken with assorted grilled garden veggies , greens , feta cheese , honey dill vinaigrette served in a flour tortilla - to the Kickin ’ Cuban Sandwich - slow braised pork shoulder in their signature sweet & spicy chipotle sauce , ham off the bone , swiss , homemade pickles and remoulade sauce on grilled bread - there ’ s a lot of variety and flavor coming out of this kitchen .
The Brick n ’ Mortar location has allowed Minella to expand the business in three ways , all of which should make customers happy . First , it serves as a home base for the Burgh Bites truck , which loads up every week for its travels throughout the city . Second , it expands the catering capabilities of the business , which has successfully catered events from weddings to corporate events , and lastly , it provides a new , sit-down experience for customers looking to have a in-and-out , casual meal .
“ We ’ re known for the food truck and our catering and we ’ ve catered parties up to around 500 people and full-menu weddings for 250 people ,” Minella said . “ With Brick n ’ Mortar , we can now serve people in our own house , so to speak .
People familiar with Burgh Bites already know that the menu changes often during the busy season with different sandwiches available almost daily . Minella said that menu rotation will most likely apply to the restaurant as well . Favorite sandwiches like the revered Rastafarian - Jamaican jerked chicken , corn / mango salsa , charred chili pepper aioli , greens on a grilled pita - will always be available , but customers who are looking for something new will always have something to choose from every time they come through the doors .
