BBQ Marinade
Rosemary
This shrub-like herb is very
fragrant, a little goes a long
way. One of our favourites
for the grill, the tender tips
are also useful when
roasting meat and poultry.
Parsley
A very easy herb to grow,
parsley is available in both
curly leaf and flat leaf.
Much more than a garnish,
it makes a wonderful
marinade or pesto, and
adds a refreshing taste to
salads.
2 tsp fresh parsley
2 tsp chopped fresh thyme
3 cloves garlic, minced
1/4 cup olive oil
1/2 cup balsamic vinegar
salt and pepper to taste
Mix all ingredients into a
bag for a tasty meat or
poultry marinade.
Mojito
10 fresh mint leaves
1/2 lime, cut into 4 wedges
2 tablespoons white sugar,
or to taste
1 cup ice cubes
1.5 oz white rum
1/2 cup club soda
Thyme
One of the easiest herbs
to grow, thyme loves a
warm sunny spot, and
tolerates drought very well.
Choose from common
thyme, silver thyme and
the colourful and tasty
golden lemon thyme.
Wonderful for many dishes
including vegetable, poultry
and even beverages.

Muddle mint and 1 lime
wedge together in a glass.
Add other lime wedges and
sugar, and muddle again.
Fill glass almost to the top
with ice, then pour rum
over the ice. Fill glass with
club soda, and stir. Garnish
with a sprig of mint.
