The drink itself is cold, but the fresh pineapple base will make you feel like you’ve taken a quick trip to the Caribbean, and the jalapeno offers a green, earthy flavour and an unmistakable heat that will get your temperature rising. Spicy Pineapple Slush ¼ fresh pineapple, peeled, cored, cubed (about 1 cup) 1 ½ ounces cognac Juice of ½ lime ½ teaspoon honey, or more to taste ½-1 teaspoon finely chopped fresh jalapeno Pineapple wedge and jalapeno slice, to garnish 34 WWW.EATINEATOUT.CA Place pineapple, cognac, lime juice, honey, and jalapeno in a blender and blend until smooth. Taste, and add more honey and/or jalapeno, if desired. Add a handful of ice and blend until smooth. Pour into a tall glass and garnish with pineapple wedge and jalapeno slice; serve immediately.
