5 WINTER 2016 Raising Aspirations Costley & Costley COOKING DEMONSTRATION Student links up with Albert Roux CHEFS FROM COSTLEY & COSTLEY HELD A COOKING DEMONSTRATION AT THE AYR CAMPUS FOR OUR PROFESSIONAL COOKERY STUDENTS. Executive chef Andrew Costley was joined by Lochgreen House Hotel’s head chef Iain Conway and executive chef Lesley Mcquiston, who is a former Ayrshire College student. They cooked up two dishes: spiced scallops and carrot textures with an Asian broth, and wild mushrooms with wilted spinach and an artichoke foam topped with a crispy potato fried egg. Bill Costley, chairman of Costley & Costley was also at the campus to speak to a class of Hospitality Management students. Bill is on the Board of Management and is a former student of the College. ONE OF OUR HOSPITALITY MANAGEMENT STUDENTS HAS ACCEPTED AN INCREDIBLE OPPORTUNITY TO WORK WITH ONE OF THE WORLD’S BEST LOVED CHEFS, ALBERT ROUX OBE. Emma-Rose Milligan met the restaurateur at November’s Scottish Chefs Conference where she was representing her current employer; Braehead Foods. Afterwards she was offered a three-year training programme with his company, with one year taking place in France. Click here to view Bill Costley discussing the importance of the College Albert’s Le Gavroche restaurant was the first in Britain to achieve Michelin star status. It was also the first to receive three Michelin stars – the highest rating available. He continues to run a series of successful restaurants around the world including a number in Scotland. Emma-Rose will travel to one of those restaurants, situated within the prestigious Inverlochy House in Fort William, for an introductory meeting. She will complete her HNC course before working at the Three Chimneys over the summer period. Once she is finished there she will join up with Albert Roux’s company. Curriculum Manager Sally Kennedy commented that Emma Rose has been offered a “once in a lifetime opportunity” which is “wonderful for her and will inspire our hospitality students”.
