A brilliant lunch salad that will save you a fortune. This is another of those super salad lunches we have been preparing, it is great served cold, and has all the benefits of being as hot as you like it. The heat dies off slowly over a few days.

Ingredients

A selection of peppers, hot or not.

2 cloves garlic

Juice of half a lemon

A little oil

A little salt

300 g chicken pieces

1 can chick peas, drained

150 g cous cous (cooked)

100 g lentils, cooked and drained

Method

Add all the ingredients except the chicken to the pan and cook until soft and all the flavours are infused.

Add the chicken and mix well with the flavours.

Cook the chicken through and allow the flavours to infuse

Mix the peppers with the chick peas, lentils and cous cous. Add salad or spinach leaves to your taste.

Check for seasoning and serve in lunch sized portions.
