An Evening Of Preludes
The kitchen at Pacific Rim’s ORU Cuisine is headed by
Executive Chef Nathan Brown, who is famous for using
locally-sourced and seasonal ingredients inspired by the
Pacific Northwest. Chef Brown’s affinity for creating
simple and skillfully prepared dishes made with sustainable ingredients and his farm-to-table style can be traced
back to his upbringing in the small Ontario farm town
of Lucan. ORU was the vibrant venue for the exclusive,
one-of-a-kind dining experience that was curated by
Chef Brown himself. Seven courses were served from the
open concept kitchen, including an entremets and a palate cleanser. The first course, a surprise Chef ’s Seasonal
Creation, was a seafood lover’s dream – BC Shellfish,
prawns, clams, mussels, kelp, dashi syrup and dulse
flakes. Then came a spring salad with golden beet vichyssoise, asparagus, r adish, fava beans, spinach, cashews and
lemon balm oil. A light chicken consommé followed,
containing wild mushrooms, chicken cotechino, crispy
skin, and preserved pear. This was the perfect prelude to
the main course of pork belly with parsnip, red onion,
fennel, parsley, port jus and crackling.
A cranberry-vodka sorbet with a delicate honey syrup,
Belvedere vodka, and crème fraîche foam provided a
tasty palate cleanser. We then enjoyed the sixth, and
main, course, which came with many difficult choices.
Offerings included Sablefish with carrot agnolotti,
roasted onion, asparagus, French beans and spinach,
Duck breast with duck confit risotto, oyster mushroom,
spring onion, duck glace, and cherry reduction or the
Mushroom risotto with ponderosa’s find, icewine gel,
balsamico, cress and crisp parmesan. After six savoury
courses, the Caramel Apple with cheesecake mousse,
pecan caramel corn, and soaked apple were a welcome
treat and a sweet way to end the meal. Of course no lavish dining experience would be complete without Veuve
Clicquot, which we enjoyed throughout the evening.

whites are pulled from the impressive floor-to-ceiling wine cellar.
