For the Pomegranate Paloma , the neighbourhood chosen
was “ Pilsen ” which has seen a shift in demographic in recent years . Early on it was traditionally an Eastern European community , but has since shifted and become predominantly Latino . To reflect this neighbourhood , Chef Atticus created a twist on Duck Carnitas made with fresh corn tamales , queso fresco and topped with a burnt onion salsa verde .
