Remove the cake card and cover in cling wrap .
Ganache sides . Scrape back ganache to the top 6 inch card and bottom 5 inch cake board .
Remove any visible cake and re-ganache and scrape .
Once firm , hot knife by placing a crank pallet knife in boiling water . Wipe off water before smoothing ganache . Firm in fridge
Step 29 :
Once firm remove cake card and cling wrap . Cut 6 inch card slightly smaller and re-attach using ganache .

Make sure top is level . Cover your cake in cling film to avoid any cake crumbs sticking to your work .
Step 32 :
Start stacking your roof , ganaching each layer to get your desired height .
Step 33 : Step 34 :
If you have gaps , use leftover cake and ganache to pack it up .
Carve the pitch of the roof .
Step 35 :
Ganache and scrape back any excessive ganache . You may need to take some time in making sure your levels are right . If not , adjust by carving cake or adding more ganache .
Step 36 :
Use flexible scraper to help get a smooth finish . Let set overnight .
