How do you keep up with new cake
decorating trends, in an industry that is
continually evolving?
If you are a creative person, you don’t
follow trends, you build on them. I find
my inspiration everywhere…fabric,
gardens, books, art. All you need is
to be curious about the world, and not
stuck on trendiness.
What is one technique you wish you
saw more of on wedding cakes?
Buttercreme for sure, and just quality
overall: deliciousness. I am afraid that
too much art and architecture has
replaced taste. Yes a cake should be
fabulously beautiful but is must also be
fabulously good to eat.
What words of wisdom would you love
to share with our cake decorating
community?
Spend the money to always use the
freshest and best ingredients you can
find. Always.
The best butter, the best chocolate, the
best eggs and milk, the best flour, and
fruits. It will always make a difference
in the end product.
