What do you think is the most popular
wedding cake trend currently?
Regardless of the materials used
(gumpaste, wafer paper, painted,
appliqué), I think flowers continue to
be a popular and growing trend in the
wedding cake industry. Definitely more
popular than even a few years ago!
It’s wonderful to see, and I love the
incredibly creativity with the different
textiles, mixing flowers with strong
patterns and graphics, and the flower
colors ranging from soft pastels all
the way to deep colors with gilded
finishes.
What kinds of wedding cake trends do
you forecast in the next 12 months?
I continue to get more and more
inquiries from students for classes in
not only making sugar flowers but also
how to arrange them in lush looking
bouquets. So, while there will still be
the wonderful occasion for a single
statement flower on a cake, I think
floral bouquets and arrangements on
cakes will continue to trend into next
year and beyond. They may vary in
size, take on a more modern or messy
shape (versus a tight traditional posy),
and they may be mixed with other
complementary textiles and finishes,
but I’m excited to see the floral trend
continue to grow.
